Grampa Boo's Pulled Pork

Start with a high quality Pork Shoulder or Pork Butt keeping as much of th fat cap on as you feel comfortable with.

Generously rub with your favorite spices, I suggest:

Spice Rub
  • 1 part Smoked Paprika
  • 1 part cinnamon
  • 1/4 part Cayenne pepper
  • 1/4 part sea salt
  • 1/2 part black pepper
  • 1 part brown sugar
  • 1 part thyme
  • 1 part basil
A 'part' can be whatever measure you want to use
    Braising liquid
    • 1/2 cup Apple cider vinegar
    • 1 cup apple juice
    • 1/4 cup Bourbon

    Cover the pork with the rub and drizzle with a little olive oil, place in a heavyduty roasting pan and let sit for 10-25 min.

    Add braising liquid to the roasting pan.

    cover with aluminum foil and Roast in a 200 degree oven for approx 5 to 6 hrs, or until the center bone can be pulled out without any resistance

    When the meat is cooked and super tender, let it cool for a few minutes the 'pull' the pork away from the bone. Pour off and reserve the braising liquid.

    With your hands or a large fork, break up the large pieces of pork. If it is dry add a little of the braising liquid. 

    At this point place the pulled pork in a crock pot or sauce pan add Grampa Boo's sauce until it is just covered and simmer until it is warmed through.

    Serve on a nice bun with crumbled blue cheese or a sharp Irish Cheddar., and a creamy Cole slaw.

    Grampa Boo's Barbeque Basting Sauce has been a tradition in our family for over 100 years. The recipe has been passed along from our grandfather (with much prodding) in the Tennessee style of sauces, a little sweet, a little spicy and a lot of flavor.
